ORIGINALITY AND QUALITY To obtain a high quality product starting from excellent raw materials is crucial. All of "Terre Nere" products are prepared the traditional way, using just fresh fruit from Sicilian suppliers only. We pay particular care and attention to the selection, preparation and weeding, all done by hand, to preserve and save the texture and integrity of the fruit. We respect the natural rhythm of the seasons, by not using greenhouses producce or frozen fruits, putting instead our efforts only on unprocessed and freshly harvested fruit. Even the lemon juice used for our conserves - the precious essential oils it contains in the bark are used too- is squeezed inside of the company only during the processing. We add to sugar, the only one, natural preservative of our products, Zafferana Etnea honey.
This allows us to obtain a refined sweetness compared to a reduced calorie intake, with the added advantage of an extraordinary palatability, that only a top quality honey can guarantee. The genuineness and the freshness of the fruit of Etna, we combine the specialties that made famous our land: the Avola almonds, pistachios from Bronte, Modica chocolate and nuts born in the woods on the slopes of the volcano. In addition, in our jams, citrus peel finest are candied in orange blossom honey, according to an exclusive process that makes them soft and crunchy at the same time, keeping intact all the flavors and aromas. Jellies, finally, are the will to offer a different way to consume our noblest wines: intense, delicate or combined with exotic spices, perfectly match with cheeses, cold meats and boiled meat, not disdaining even the boldest combinations with fruit, fish and shellfish, in a marriage of flavors able to surprise and enthrall the most refined palates.

TERRITORY AND ENVIRONMENTAL ETHICS The variety of ingredients used in our" Terre Nere" selection reflects the biodiversity of Etna Mountain: both a harsh and generous land, from the sunny citrus trees at sea level, passing through fields of prickly pears and the wonderfully vineyards landscaping, up to the highest altitudes , where the heroic apple orchards defy the fury of the volcano . In addition to our continuous quest for quality, we are proud of our low-impact production cycle: the energy we use comes only from renewable sources and, as a matter of fact, all of our inventories are recycled and addressed to farming . We use exclusively recyclable materials for our packaging, like paper, cardboard, glass , steel and aluminum .

    Cresciuti in condizioni rese aspre e difficili dalla conformazione geologica ed orografica del territorio, i frutti che sfidano la potenza del vulcano portano con loro tutta la forza ed il carattere di un territorio impervio e complesso. Alla dura selezione fatta dalla natura, aggiungiamo la nostra per destinare alle confetture che produciamo solo i prodotti migliori. Un paziente e certosino lavoro di mondatura separa la parte nobile dei frutti da quella che viene considerata scarto e destinata all'allevamento. In questa maniera, oltre a non inquinare, manteniamo e salvaguardiamo il naturale processo di rotazione delle sostanze alimentari che trova nell'ultimo solo una parte del suo ciclo. L'altissima percentuale di frutta impiegata, il miele di Zafferana Etnea, il succo di limone fresco collaborano ad esaltare e conservare tutti i sapori e gli aromi originali. Da ultimo, aggiungiamo spezie e frutta secca, anche qui scegliendo rigorosamente tra le migliori qualità prodotte alle pendici dell'Etna

    Riped in arduous and harsh conditions, due to the the geology and the orography of this  territory, the fruits that defy the power of the volcano bring with them all the strength and character of a strenuous and gruelling soil. To the selection made by nature, we add ours, in order to address to our jam selection only the best products. Throuh a patient and delicate manoeuvring we remove the part considered waste and address it to livestock and keep the noble part of the fruits . This way, besides not implementing polluttion, we maintain and safeguard the natural process of rotation of the food elements, of which the prosess described represents only a part of its cycle. The very high percentage of fruit used, Zafferana Etnea honey, fresh lemon juice work together to enhance and preserve all the original flavors and aromas. Finally, we add spices and nuts, always choosing between the best quality, produced on the slopes of Etna

    Dai migliori agrumi di Sicilia, che selezioniamo e curiamo personalmente lungo tutto il processo di maturazione, un insieme di marmellate golose ed originali, dense dei profumi della nostra terra ed impreziosite da abbinamenti ricercati. Resi forti e saporiti dalla notevole escursione termica che caratterizza l'alternanza notte giorno, gli agrumi cresciuti all'ombra del vulcano si contraddistinguono per la ricchezza di flavonoidi e polifenoli che li rendono unici al mondo. Privati della buccia esterna - manualmente ad uno ad uno - arance rosse, limoni, mandarini e clementine vengono lavorati a parte e poi uniti alle scorze candite nel miele di zagara. L'altissima percentuale di frutta impiegata e la cottura lenta ed temperatura attentamente controllata ne esaltano e conservano tutti sapori ed aromi originali. Da ultimo, aggiungiamo spezie e frutta secca, anche qui scegliamo rigorosamente tra le migliori qualità prodotte alle pendici dell'Etna.

    From the best Sicilian citrus, which we select and personally take care of throughout the ripening process , a set of delicious, original jams, rich of the flavors of our land and exalted by refined combinations . The remarkable temperature range that characterizes day night alternation, makes them strong and tasty; the citrus fruits riped in the shadow of the volcano are characterized by their richness in flavonoids and polyphenols, that make them unique in the world . Peeled - manually one by one - blood oranges , lemons , mandarins and clementines are processed separately and then added to peels candied in orange blossom honey . The very high percentage of fruit used, slow cooking and temperature carefully monitored exalt and preserve all the original flavors and aromas . Finally, we add spices and nuts, always choosing among the best quality produced on the slopes of Etna .

  • Wine Jellies

    From local finest grapes, a selection of jellies enriched by the addition of honey derived exclusively from Zafferana Etnea. Wine is subjected to a short evaporation, which eliminates alcohol content while keeping intact all the original flavors of the bouquet, the wine is cold mixed with honey to preserve all of its basic organoleptic characteristics. The addition of spices also contributes to intensify the flavors of an extraordinary product, because it is made from extraordinary raw materials . Produced in small quantities, due to the reduced availability of excellent wines each vintage, our wine jellies are suitable for many different uses:  starting from sweet and savory dishes seasoning, or can be used as precious dressings on salads and boiled or, why not, as a delicious garnishing for fragrant canapes.
